The return of Eclipse!
Eclipse is one of the most striking cheeses at Cato Corner and is a fan favorite on the farm.
This ash-ripened version of our Celeste adds a bold touch to any cheese plate. Inspired by Loire Valley goat cheeses, this lactic-set cow’s milk cheese develops a delicate curd overnight before being hand-ladled, drained, and aged. Eclipse is rolled in edible vegetable ash to balance the acidity and enhance the cheese’s flavor as it matures. At two weeks, Eclipse is velvety and slightly tangy, growing richer and more robust as it nears one month.
