Dolore Spontaneous Ale with Dark Cherries and Black Raspberries and Husk Oak Aged Grisette
| Introducing Dolore, a new addition to Music Vale Compositions, our series of spontaneous ales. Dolore sees the pairing of two of our favorite dark fruits (Black Raspberries and Morello Cherries) in a carefully assembled blend of barrel-aged beer spanning three years of spontaneous brewing. The common thread between those two fruits, and what makes them special, is their own complexity and depth. There are, of course, sweet, jammy undertones to each – beyond that however, black raspberries have an unmistakable earthy/woodsy flavor while the dark cherries we source have their own floral and currant-like qualities. Both bring in a lovely vinous quality that works wonderfully in the style. Returning, and for the first time in cans, we have a new batch of Husk to share. Our mixed-culture fermented, foeder-aged Grisette is made with six-row barley, grown by our friends at Thrall Family Malt, paired with sizable additions of their wheat, buckwheat and emmer – a true celebration of local grain. This batch was hopped with a combination of Nugget, Hersbrucker, Callista and Saaz hops. We’ve always been struck by the approachability of this beer – it’s dry and refreshing with a subtle graininess, playful minerality and a hop character that ties it all together. Husk was a no-brainer to join our growing lineup of Farmhouse cans. |
