Local Cheese and Beer Featured at Farm Dinner

COLCHESTER — A 5-course farm-to-table dinner featuring beer from Hop Culture Farms, cheese from Cato Corner Farm, with dishes using each cheese by Chef Tim Marotto from Vintage in Colchester will be held on August 18. 

For each course, diners will sample each cheese on its own — paired with a beer — and then taste a dish that includes that cheese, said Heather Wilson, co-owner of Hop Culture Farms and Brewery, at 144 Cato Corner Road in Colchester.

“Cato Corner and I have done collaborations in the past where we’ve paired beer and cheese, but because Tim is such a big supporter of local agriculture — and he has a food truck that comes to our brewery in the weekend sometimes — we just thought it would be a really fun idea to not only pair the cheese in the beer but also have him interpret the cheese in a dish,” she said. 

Marotto said he will source local farms near Cato Corner Road for the ingredients, including Savitsky Farm and Cugno’s Farm.

“We’re really trying to keep basically within like a half-mile radius of [the dinner],” he said. “The big thing with our restaurant in general is we don’t use anything that’s not only in season but [also] from Connecticut. It’s got to be specifically grown, made or produced in Connecticut.”

Marotto said he wanted people to know they can shop easily from area farms instead of going to a grocery store. 

“This is the perfect dinner to be able to show how you can actually do something like that pretty easily,” he said. 


Tickets for the dinner, which will be held at Hop Culture Farms and Brewery, are $100, and available for purchase here. Guests may arrive at 5:30 p.m. and dinner will start at 6 p.m.
