OLD LYME — “The menu will be driven by local farms so it will be changing regularly based on the availability of the produce that we will be using,” said Chef Shelley DeProto, who is preparing to open Long River Local, a farm-to-consumer retail food shop at 96 Halls Road.

“We won’t be focused on any one type of cuisine but rather a variety of cuisines to bring out the best in the ingredients,” she said in an email to CT Examiner.

The shop, which is expected to open in early July, will serve breakfast made to order as well as baked goods and frittatas for a grab-and-go breakfast, DeProto said.

“Lunch will also be available made to order with a selection of sandwiches, panini, salads, and grain bowls. There will also be grab-and-go items for those that are in a hurry,” she said.

The market will include produce from Long River Farm in Old Lyme as well as other local farms.

“There will be a large selection of local produce and other items such as honey and cheese from a number of farms in the area, in addition to house-made jams, sauces, dressing, marinades, pickles, as well as a variety of cheese, and charcuterie, fresh breads, cookies, scones and savory baked items,” DeProto said.

The iconic 1.83-acre property, owned by Richard and Barbara Halls, was once used as a plant nursery and has sat vacant for nearly 10 years. DeProto has applied for a special exception change of use from retail to food service.

She is also building a chicken coop, which was nearly finished on Tuesday.

“We’re just chipping away at everything while we wait for our zoning meeting on the 14th of June,” she said. “We are all so excited to open! We can’t wait!”
